BUCKTOWN—About a year after leaving his chef de cuisine post at Blackbird, Mike Sheerin is finally opening up The Trenchermen. He's teamed with his brother, Pat Sheerin (Signature Room) and restaurant/bar owners Matt Eisler and Kevin Heisner to take over the former Spring space.
